Ah. Another Sunday Evening contemplating the upcoming week. I’m sure it will come with it’s challenges but you know what? I’m thinking positive today. And I’m geared up and ready to tackle whatever tomorrow brings. In fact… I actually can’t wait to go to sleep because:
A) I am usually exhausted by the end of the day
B) I love wearing my uber comfy Packer Jammies (yes I know. But we’ll be back again next year!)
C) it’s like taking a time travel spaceship to my favorite time of the day – BREAKFAST time!!
Seriously, who doesn’t LOVE breakfast? Every breakfast food in the world is amazing and I want you to be as excited as I am, so I want to share with you 2 of my go-to breakfast (or lunch, or snack, or pre workout, or just cause I want something sweet) recipes. One is unbelievably easy and the other takes a little more prep time, but it is so worth it. Oh and did I mention that that both use Apollo® Protein Power AKA the best-tasting protein in the world? Happy #TastyTuesday peeps! My life is now complete! After years of having the same post workout combo (protein power mixed with water and a 1/2 of a banana), I decided it was time to mix it up a bit. After what looked like a science experiment gone horribly wrong, I came up with this delicious goodness. I found the original recipe online and made some tweaks to make it my own.
Happy #TastyTuesday! I’m just over here living the “basic girl” dream of pumpkin this and pumpkin that. This recipe has been my absolute favorite go-to snack lately and who can blame me? It is freaking delicious (and nutritious)! Pumpkin is an incredible source of Vitamin A, Vitamin C, antioxidants and fiber. And with more potassium than a banana, pumpkin is a great post workout recovery food. Top a bar with natural nut butter for a healthy snack or serve with a spoonful of fresh whipped cream for a great dessert. I promise once you have tried these bars you will be excited to be “basic”.
Sorry, but this weather is right around the corner, so why not be prepared for a healthy version of chili BEFORE you are chilly? I got this amazing recipe from a client a few years ago and although I can totally wait for the cold weather that makes me crave warm, comfort food, I couldn’t wait to share this delicious recipe with you!
* 1 tablespoon EVOO
* 1 1/2 cups chopped onion (I use 1 small onion because I’m not a huge onion fan)
* 2 4-ounce cans chopped green chilies
* 1 teaspoon dried oregano
* 1 teaspoon ground cumin
* 1/8-1/4 teaspoon cayenne pepper
* 2 15-ounce cans great northern beans, rinsed
* 1 15-ounce cans black beans, rinsed
* 4 cups reduced-sodium chicken broth
* 4 cups shredded cooked skinless turkey, or chicken
Heat oil in a large pot oven over medium-high heat. Add onion; cook until softened, about 5 minutes. Stir in chilies, oregano, cumin and cayenne. Cook for 5 minutes. Stir in beans and broth; bring to a simmer. Cook for 20 minutes. Add turkey (or chicken); cook for 5 minutes more. Serve.
Happy #TastyTuesday! Today I am going to share with you my “go to” breakfast. I refuse to cook breakfast every morning. When I get up in the morning I am HANGRY and I don’t have time to fool around. I need food in my belly and coffee in my system ASAP. These little gems are waiting in my fridge for me every morning. All I have to do is pop one in the microwave and top it with a little Almond Butter and BAM – breakfast!
Directions: Preheat oven to 350. Mix all ingredients EXCEPT oats into blender until smooth. Add in oats and blend until your preferred consistency. Less blending for chunkier loaves and more for bread like loaves. Lightly coat 6 mini muffin tins with Pam. Pour 1 c of mixture into each tin. Cook for 50-60 minutes. Let cool and store in fridge for up to 7 days.
I prefer to use Unico Cinnamon Roll Protein Powder and a custom cinnamon roll blend from MyOatmeal.com when baking these loaves. It gives them a great flavor!!! If you want to try any of the Unico products use code FITTOGO when checking out and get FREE SHIPPING.
Before even considering it, I checked out the website to see what the products were all about. After like 15 seconds on Unico’s website, I was in love with the company’s honesty:
“We are a supplement company. We don’t make magic pills. We don’t promise overnight transformation. We won’t try and trick you with foolish marketing gimmicks. What we will do is help you make yourself better. We are here to supplement your journey towards your fitness goals-whatever they may be.”
“The supplement industry sucks. We were founded to become the exception. We’re not going to make you lose 10 pounds. We’re not going to make you gain 10 pounds of muscle. We’re not going to make you run faster, lift heavier, or set new personal bests. You’re going to do that and we’re going to help.”
And with 125 calories, 25 grams of protein, 5.5 grams of BCAA’s, 75 mg of Omega-3’s, 2.5 grams of prebiotic fiber, 1 gram of sugar, no gluten, no fillers, no artificial colors, no questionable preservatives I was all….
When the products were delivered, it was perfect timing….30 minutes until workout time!!! I ripped open the box, grabbed the Athena 3.0 Intense Cherry Limeade Blast Pre Workout and mixed myself up a dose of the cherry and limeade goodness. I am VERY sensitive to pre workouts, so I only used 1 scoop. Like the website claims, I had lightning fast energy, dialed-in focus and NO JITTERS!!!! I was able to push a harder during my lifts and I still had energy in the tank afterwards.
After my lift was over, I grabbed the Apollo Delicious Vanilla Milkshake Protein Powder and mixed up my post workout shake. Normally I mix my powder, 1/2 of a banana and water in my ninja because I HATE chunks in my shake, but I wanted to see how Apollo mixed in just a shaker. And, after a bit of shaking, it was smooth and creamy. The flavor was just as promised – delicious vanilla milkshake!!! YUMMMMMM!
I decided to give the pre workout and protein powder multiple tests so I could give it a full and complete review. I used the pre workout before a long run, an intense interval workout, a circuit style lift and the dreaded leg day. I was surprised that my energy stayed high and steady during each workout, even after a horrible night’s sleep. I also used the protein powder to make different types of smoothies to see if the claim that the “slow-digesting proteins” would keep me from starving to death 10 minutes after drinking it. Yep – they were right on that claim too. I made my favorite Frosty Protein Shake (I used chocolate protein powder in the original) and I have to say, I liked the Apollo version better than the original!
All in all I was pleasantly surprised with both products that I received from Unico Nutrition as well as Unico Nutrition as a company. To quote their Protein Promise:
“Whether you are training for a half-marathon, the upcoming-season, or building a better physique, your quest hinges on your ability to re-build your muscles stronger than ever before. Where several companies are cutting corners with amino spiking, and filler ingredients- we are standing strong. We promise to ALWAYS produce Apollo® right here in the United States using ONLY The highest quality proteins like grass-fed whey. We promise to always hold the quality of Apollo® first and foremost even in the face of higher costs. It’s our Protein Promise to you. And you can bet it will NEVER be broken. Ever.”
I am always proud to give my hard earned money to a company that stands behind their beliefs, had faith in their products and believes in keeping production in the United States. I’m glad I have found Unico Nutrition and I will be incorporating their supplements into my healthy lifestyle.

After what looked like a science experiment gone horribly wrong, I came up with this delicious goodness. I found the original recipe online and made some tweaks to make it my own.
A few months ago I came across MyOatmeal when I was perusing Instagram. There was my coach, Brandan Fokken holding up 2 bags of, what he called “the best oatmeal out here”. So, being the oatmeal connoisseur that I am, I had to try this stuff. I had no idea what it was, but when I logged onto their website I HAD TO HAVE IT! The first thing I saw on their site was “22 Billion combinations of healthy Oatmeal.” WHAT? This place makes different kind of flavored oatmeal? Um, yes please! So I clicked the Build Your Bland tab and was in awe at all of the choices. First you pick the size of bag you want type of non-GMO oatmeal you would like. You can pick from instant, rolled, whole, signature smash blend or gluten free. gluten free. From there you create your masterpiece. Add your flavor or flavors, fruit, nuts/seed and sweetener. Seriously – the choices are endless! I created 4 blends:
Banana Bread and Brown Sugar (gluten free oats, banana bread flavoring, brown sugar flavoring, banana chips and stevia)
Oh, la, la (gluten free oats, gingerbread flavoring, ground flax and stevia)
Tera’s CinnaOATmeal (gluten free oats, cinnamon roll flavoring, ground flax and stevia)
When I got my bags in the mail, I ripped them open and got busy making!!!! I seriously made each flavor and did taste tests . I couldn’t believe how good EACH ONE of these oatmeal blends were. Each one tasted exactly how I created them to taste. I kind of thought that they would have that chemical “oatmeal in a packet” taste, but not at all. I could tell that they used quality products and the hand-made blends were mixed with pride and care. Thanks MyOatmeal for making such a great product that is not only great tasting, but is great for the body and soul!
